In My Fridge... (Dinner Plan)


Each week I peek in my fridge to see what needs to be used up and I take a couple of minutes to think of ways to use up those ingredients in the next few days...

I felt like trying out recipes with "new" (as in we haven't used them in a while) ingredients this month so while I'm still striving to substitute with ingredients that we already have in order to reduce my cost, I will be buying  things such as chorizo and shrimp this week.


MONDAY: Island Burgers with Sweet Potato Fries (recipe from a magazine but I can't figure out which one. I'll probably end up making just regular ground chicken cheeseburgers, anyway!)
  • From the freezer: ground chicken
  • From the pantry: canola oil, jerk seasoning (use Cajun seasoning if I don't have any), sweet potatoes
  • From the fridge: "homemade" greek yogurt (made from Aldi plain yogurt)
  • Need to harvest: green onions
  • Need to make in advance: pretzel buns
  • Need to buy: nothing

TUESDAY: Ground Chicken Taco Salad
  • From the freezer: ground chicken, Wholly guacamole
  • From the pantry: homemade taco seasoning, tortilla chips. can of refried beans
  • From the fridge: shredded mozzarella, salsa, tomatoes, light sour cream
  • Need to harvest: lettuce
  • Need to make in advance: dice the tomatoes, shred the lettuce
  • Need to buy: nothing

WEDNESDAY: Chorizo and White Bean Ragout with Buttermilk Jalapeño Corn Bread (Ragout recipe from "Good & Cheap, Eat Well on $4 a Day", free downloadable cookbook available here)
  • From the freezer: diced onion, buttermilk jalapeño corn bread
  • From the pantry: canned diced tomatoes, salt & pepper
  • From the fridge: Butter, jalapeños (harvested last week), minced garlic
  • Need to harvest: nothing
  • Need to make in advance: puree the tomatoes in blender
  • Need to buy: chorizo, 1 can cannellini beans

THURSDAY: Hearty Amish Chicken Stew with Brown & Serve Rolls (recipe from "Welcome to Amish Country: 16 Easy Amish Recipes from Mr. Food", free cookbook download available here)
  • From the freezer: chicken broth (10 cups), diced onions, diced celery, chicken drumsticks (7), brown & serve rolls
  • From the pantry: potatoes, carrot, salt & pepper, bowtie pasta
  • From the fridge: butter (for the rolls)
  • Need to harvest: nothing
  • Need to make in advance: roast chicken drumsticks in advance, brown the rolls.
  • Need to buy: nothing

FRIDAY: Honey Pecan Pork Chops with Baked Potatoes, Stir-fried Collard Greens cooked in bacon fat(I can't remember where I got the recipe from!)
  • From the freezer: boneless pork loin chops
  • From the pantry: flour, salt & pepper, honey, potatoes (or sweet potatoes if any are left)
  • From the fridge: butter, chopped pecans, bacon fat, light sour cream
  • Need to harvest: collard greens, green onions (for my baked potato)
  • Need to make in advance: nothing
  • Need to buy: nothing

SATURDAY:  Mushroom Ragout with Polenta
  • From the freezer: nothing
  • From the pantry: salt & pepper, marinara sauce, corn meal, sea salt
  • From the fridge: butter, baby bella mushrooms, grated parmesan, sundried tomatoes, minced garlic
  • Need to harvest: parsley
  • Need to make in advance: polenta chub (the day before, preferably)
  • Need to buy: nothing

SUNDAY: Shrimp Scampi with Roasted Peppers and Spinach
  • From the freezer: shrimp, diced sweet mini peppers, chicken stock (1/2 cup)
  • From the pantry: some kind of pasta, EVOO, red pepper flakes, kosher salt, pepper
  • From the fridge: minced garlic, grated Parmesan cheese, butter
  • Need to harvest: spinach
  • Need to make in advance: homemade bread
  • Need to buy: shrimp
