In My Fridge... (Dinner Plans)

Each week I peek in my fridge to see what needs to be used up and I take a couple of minutes to think of ways to use up those ingredients in the next few days...

As I picked recipes for this week from recipes I had just clipped from several magazines, I didn't notice that I had selected 2 Martha Stewart recipes.  I've had horrible luck with her recipes in the past (every one of them turned out very tasteless) so I'm a little nervous about finishing my week with 2 of hers again.  However, I'll be substituting ingredients in order to use as many as I already have instead of following her list to the T, so my results will be entirely mine this time, I think (for better or for worse!).   We might end up eating sandwiches on Saturday and Sunday...Wish me luck!

MONDAY: Amish Country Casserole and Salad (recipe from "Welcome to Amish Country: 16 Easy Amish Recipes from Mr. Food", free cookbook download available here)
  • From the freezer: diced onion, ground beef
  • From the pantry: EVOO, tomato soup can, cream of mushroom soup, salt & pepper, paprika
  • From the fridge: milk
  • Need to harvest: nothing
  • Need to make in advance: egg noodles
  • Need to buy: nothing

TUESDAY: Pork with Butter-Herb Sauce with Zucchini Potato Pancakes
  • From the freezer: pork chops
  • From the pantry: oregano, kosher salt, pepper, EVOO, white wine, potatoes, flour
  • From the fridge: baby bella mushrooms, garlic herb butter, zucchini, egg
  • Need to harvest: thyme, green onions (instead of leek and also for pancakes)
  • Need to make in advance: garlic herb butter, shred potatoes
  • Need to buy: nothing
  • Note: will omit the goat cheese

WEDNESDAY: Grilled Sweet Italian Sausage with Tomato Cream Sauce over Linguine
  • From the freezer: Italian chicken sausage, diced onion, shredded Parmesan
  • From the pantry: EVOO, red wine, diced tomatoes, oregano, flour
  • From the fridge: minced garlic, light sour cream (in lieu of table cream), eggs
  • Need to harvest: nothing
  • Need to make in advance: linguine
  • Need to buy: nothing

THURSDAY: Grilled Smoked Turkey Sausage and Spinach-Parm Casserole
  • From the freezer: smoked turkey sausage
  • From the pantry: EVOO, Italian seasoning, salt
  • From the fridge: butter, minced garlic, grated Parmesan cheese
  • Need to harvest: nothing
  • Need to make in advance: nothing
  • Need to buy: spinach

FRIDAY: Quick Pepperoni Calzones and Salad (recipe from Taste of Home Feb-March 2015 issue. See if you can view the magazine on Zinio through your library system, as it is not available online)
  • From the freezer: nothing
  • From the pantry: pasta sauce with meat, Italian seasoning
  • From the fridge: pepperoni slices, milk, Parmesan cheese, tomatoes, homemade salad dressing
  • Need to harvest: lettuce
  • Need to make in advance: pizza dough (recipe in Artisan Pizza and Flatbread in 5 Minutes A Day cookbook)
  • Need to buy: mozzarella cheese, cucumber

SATURDAY: Chicken and Mushroom Tagliatelle
  • From the freezer: chicken breasts (in lieu of thighs)
  • From the pantry: flour, salt & pepper, white wine, 
  • From the fridge: eggs, butter, shallots, white mushrooms (instead of cremini), Parmesan cheese
  • Need to harvest: basil (will use instead of parsley)
  • Need to make in advance: linguine
  • Need to buy: heavy cream
  • Note: the process for making Tagliatelle seems incredibly complicated to me, so I might just make linguine instead (see Wednesday's info)

SUNDAY: North African Beef and Carrot Stew with Mint
  • From the freezer: Whatever steaks I have in the freezer, diced onion, tomato paste cubes, chicken stock (2 cups)
  • From the pantry: salt & pepper, EVOO, cinnamon, cayenne pepper
  • From the fridge: nothing
  • Need to harvest: mint
  • Need to make in advance: nothing
  • Need to buy: carrots, couscous
