This Week's Dinner Plans

Each week I peek in my fridge, freezer, and garden, to see what needs to be used up and I take a couple of minutes to think of ways to use up those ingredients in the next few days...

Greg will be on a business trip most of the week so, knowing me, I might throw this menu out the window and cook breakfast for dinner most nights!  The kids and I will be going to a gala on Friday night where they are serving "refreshments" so I plan on having us eat homemade thin crust pizzas before we leave... this will use up several things that are in my fridge right now.  Then my daughter and I are going on a 2 to 3 day trip to Tallahassee since she will be presenting her website at the National History Day state competition at the beginning of next week so I will make a crockpot chile that will hopefully feed Greg and our son on Sunday night and Monday's lunch.

This week's menu is woefully low on vegetables (and high on starches) but we'll be eating plenty of fruit. I have cantaloupe, bananas, apples and will be getting grapes on Wednesday too.

MONDAY: Bacon-Cheddar Chicken Pot Pie
  • From the freezer: Turkey Bacon, frozen diced onions, 1 cup chicken broth, chicken drumsticks (at least 7), peas
  • From the pantry: flour, sugar, backing powder
  • From the fridge: carrots, minced garlic, chicken broth, butter, spoiled milk (in lieu of buttermilk), cheddar
  • Need to harvest: nothing
  • Need to make in advance: roast chicken and shred meat, shred cheddar
  • Need to buy: nothing

TUESDAY: Chile-Crumbed Mac'n Cheese and Chicken Nuggets
  • From the freezer: chicken nuggets
  • From the pantry: macaroni, self-stable whipping cream, homemade bread crumbs, red pepper flakes
  • From the fridge: milk, shredded cheddar cheese, grated Parmesan cheese, minced garlic, butter
  • Need to harvest: nothing
  • Need to make in advance: shred more cheddar cheese?
  • Need to buy: nothing

WEDNESDAY: Spicy Tilapia Tacos with Green Rice (cooking the recipe but putting the tilapia in corn tortillas)
  • From the freezer: lemon zest
  • From the pantry: cajun seasoning, EVOO, white rice, salt & pepper, corn tortillas
  • From the fridge: nothing
  • Need to harvest: parsley
  • Need to make in advance: nothing
  • Need to buy: tilapia

THURSDAY: Pan-Fried Gnocchi, Steamed Green Beans, and Tuna Patties and  (tuna patties recipe is from The Dad Cookbook)
  • From the freezer: homemade gnocchi
  • From the pantry: homemade bread crumbs, eggs
  • From the fridge: eggs, butter
  • Need to harvest: green beans (over the past few days too)
  • Need to make in advance: nothing
  • Need to buy: Tuna, mozzarella

FRIDAY: Flat-Out Pizzas
  • From the freezer: nothing
  • From the pantry: nothing
  • From the fridge: Remaining 3 FlatOuts Artisan Thin pizza crusts, marinara sauce, pepperoni slices, mozzarella, mushrooms.
  • Need to harvest: nothing
  • Need to make in advance: shred mozzarella
  • Need to buy:  mozzarella

SATURDAY: Garlic Chicken Rigatoni and Salad
  • From the freezer: (2) boneless skinless chicken breasts
  • From the pantry: rigatoni (or whatever other pasta I have on hand), garlic salt, flour, EVOO, basil, salt & pepper, crushed red pepper flakes, croutons
  • From the fridge: sun-dried tomatoes, mushrooms, minced garlic, 1/2 cup chicken stock, grated parmesan cheese, tomatoes, cucumber, homemade vinaigrette
  • Need to harvest: lettuce
  • Need to make in advance: nothing
  • Need to buy: nothing

SUNDAY: Slow-Cooker Turkey Pumpkin Chili with Rolls
  • From the freezer: Chicken stock, pumpkin purée, ground turkey, diced onions, brown & serve dinner rolls
  • From the pantry: cumin, chili powder, cinnamon, cayenne pepper, 2 cans green chiles
  • From the fridge: minced garlic
  • Need to harvest: nothing
  • Need to make in advance: defrost ground turkey the night before
  • Need to buy: 2 cans cannellini beans
