This Week's Dinner Plans


Each week I peek in my fridge, freezer, and garden, to see what needs to be used up and I take a couple of minutes to think of ways to use up those ingredients in the next few days...

This week is a medley since I'm away from home on Monday night and not returning until late afternoon on Tuesday so I'm not sure that I'll feel like cooking dinner that day. We might order in.


MONDAY: Greg & son will have leftover Pumpkin Turkey Chili and Cornbread; My daughter and I will eat at Boston Market.
  • From the freezer: Homemade corn bread
  • From the pantry: nothing
  • From the fridge: Pumpkin Turkey Chili leftovers
  • Need to harvest: nothing
  • Need to make in advance: nothing
  • Need to buy: Dinner for my daughter and me

TUESDAY: Tuna Patties with White Rice, Salad
  • From the freezer: nothing
  • From the pantry: rice, Garlic & Herb tuna pouches, homemade bread crumbs, oil, croutons
  • From the fridge: shredded Cheddar, eggs, Parmesan cheese, grape tomatoes, cucumber, homemade vinaigrette
  • Need to harvest: lettuce
  • Need to make in advance: nothing
  • Need to buy: nothing

WEDNESDAY: Mediterranean Baked Chicken with Lemon and  Baked Potatoes
  • From the freezer: boneless, skinless chicken breasts
  • From the pantry: EVOO, lemon juice, salt, thyme, pepper, allspice, nutmeg, paprika, garlic salt, lemon-pepper seasoning, cinnamon, potatoes
  • From the fridge: minced garlic, butter, light sour cream
  • Need to harvest: nothing
  • Need to make in advance: make marinade and marinade chicken for 1 hour prior to cooking
  • Need to buy: lemons

THURSDAY: Lemon-Garlic Cream Spaghetti and Pork Loin "Chunks"
  • From the freezer: 2 bags pork loin "chunks", lemon peel and zest, diced onion
  • From the pantry: spaghetti (in lieu of fettuccine), shelf-stable whipping cream, salt & pepper, lemon juice
  • From the fridge: butter, minced garlic, neufchatel cheese, grape tomatoes
  • Need to harvest: parsley
  • Need to make in advance: nothing
  • Need to buy: nothing

FRIDAY: Pork Tenderloin with Sweet Potato Ragout
  • From the freezer: pork tenderloin, diced onion
  • From the pantry: EVOO, minced garlic, brown sugar, balsamic vinegar, salt & pepper, canned sweet potatoes in syrup, can diced tomatoes, 2 apples
  • From the fridge: nothing
  • Need to harvest: nothing
  • Need to make in advance: heat up the grill, make black bean-corn salad for tomorrow night.
  • Need to buy: 1 navel orange

SATURDAY: Grilled Hot Spicy Links on Buns with Black Bean-Corn Salad
  • From the freezer: Hot spicy links, cilantro cubes (3)
  • From the pantry: sauerkraut, EVOO, honey, 2 cans black beans, 1 can NSA corn, 
  • From the fridge: ketchup, lime juice, chopped green onions, 
  • Need to harvest: nothing
  • Need to make in advance:  heat up the grill!
  • Need to buy: hot dog buns, corn (?), avocado

SUNDAY: Grilled Smoked Turkey Sausage with Sautéed Green Beans with Parmesan, Rolls (I clipped the recipe for the beans from an unknown magazine. I couldn't find that exact recipe online so I'm linking to a similar one)
  • From the freezer: Butterball Smoked Turkey, homegrown green beans (unless we have fresh ones in the fridge), Brown & Serve rolls
  • From the pantry: salt, pepper
  • From the fridge: butter, mushrooms, grated Parmesan
  • Need to harvest: green beans, thyme, oregano
  • Need to make in advance: nothing
  • Need to buy: nothing
