This Week's Dinner Plans: 8/17 - 8/23


Each week I peek in my fridge, freezer, and garden, to see what needs to be used up and I take a couple of minutes to think of ways to use up those ingredients in the next few days...



MONDAY: Rosemary Orange Chicken and Sweet Potato Puffs*
* The Rosemary Orange Chicken recipe also comes with a side dish recipe called "Glazed Sweet Potato Puffs", which sounds delicious, but I don't have frozen sweet potato puffs, just the sweet potatoes that I harvested from my garden last week. So I'm going to use the Betty Crocker recipe that I linked to instead.
  • From the freezer: orange peel, orange juice cubes, boneless & skinless chicken breasts
  • From the pantry: ground cardamom, crystallized ginger, kosher salt, pepper, EVOO, low sodium chicken broth, maple syrup
  • From the fridge: sweet potatoes, butter, eggs
  • Need to harvest: rosemary
  • Need to make in advance:  bake the sweet potato puffs a little in advance.
  • Need to buy: nothing

TUESDAY: Slow Cooker Red Beans & Sausage with Corn Muffins
  • From the freezer: hot links, diced onion, diced green pepper, diced celery
  • From the pantry: 1 lb dried beans, EVOO,  garlic powder, Creole seasoning, smoked paprika, thyme, pepper
  • From the fridge: Jiffy corn muffin mix, chicken broth
  • Need to harvest: nothing
  • Need to make in advance: Bake corn muffins, set crockpot, cook rice in microwave
  • Need to buy: nothing

WEDNESDAY: Stir-Fried Tofu and Broccoli Lo Mein
  • From the freezer: seasoned tofu
  • From the pantry: thin spaghetti, sesame oil, low sodium soy sauce, oyster sauce, mirin, sugar, vegetable oil
  • From the fridge: minced garlic, fresh ginger
  • Need to harvest: green onions
  • Need to make in advance: nothing
  • Need to buy: broccoli (fresh or frozen)

THURSDAY: Salisbury Meatloaf and Potatoes
  • From the freezer: ground beef, diced celery
  • From the pantry: kosher salt, bread crumbs, onion powder,  Worcestershire sauce, pepper, red potatoes
  • From the fridge: egg, butter, carrots, chicken broth
  • Need to harvest: thyme
  • Need to make in advance: Nothing
  • Need to buy: nothing

FRIDAY: Elegant Pork Marsala and Potato Puffs with Salad
  • From the freezer: boneless pork chops, diced onions, 2 bacon turkey strips, frozen potato puffs
  • From the pantry: flour, pepper, EVOO, canned mushrooms, minced garlic, Marsala wine, cornstarch, croutons
  • From the fridge: chicken broth, lettuce, tomatoes, cucumber, homemade dressing
  • Need to harvest: nothing
  • Need to make in advance:  nothing
  • Need to buy: nothing

SATURDAY: Flatout Pizzas and Salad
  • From the freezer: (2) Flatout pizza crusts
  • From the pantry: croutons
  • From the fridge: pizza sauce, pepperoni, ham, lettuce, tomatoes, cucumber, homemade dressing
  • Need to harvest: none
  • Need to make in advance: nothing
  • Need to buy: mozzarella cheese

SUNDAY: Cheeseburgers and Mac'n Cheese
  • From the freezer: hamburger buns, ground beef
  • From the pantry: mac'n cheese
  • From the fridge: light mayo, ketchup, homemade pickles, American cheese, milk, butter
  • Need to harvest: nothing
  • Need to make in advance:  nothing
  • Need to buy: nothing
