This Week's Dinner Plans: 9/21 through 9/27, 2015


Each week I peek in my fridge, freezer, and garden, to see what needs to be used up and I take a couple of minutes to think of ways to use up those ingredients in the next few days...



MONDAY: Pumpkin Soup with Ham & Cheese Omelets and Rolls*
* I was supposed to cook this last Friday night but had substituted another recipe.
  • From the freezer: ham
  • From the pantry: a couple of packets of Heinz chopped onions, chicken broth, nutmeg, tarragon
  • From the fridge: pumpkin puree that I had defrosted last week, butter, milk, eggs, Monterey Jack cheese, bread dough
  • Need to harvest: nothing
  • Need to make in advance: bake rolls
  • Need to buy: nothing

TUESDAY: Pork Cutlets Parmigiana and Porcini-filled Tortellini with Side Salad
  • From the freezer: parmesan cheese
  • From the pantry: flour, bread crumbs, salt,croutons, porcini-filled tortellini
  • From the fridge: pork loin chops, eggs, marinara sauce, mozzarella, lettuce, cucumber, homemade salad dressing
  • Need to harvest: nothing
  • Need to make in advance: shred mozzarella
  • Need to buy: nothing

WEDNESDAY: Crockpot Barbecue Pork Loin, Klondike Gold Potatoes and Baby Carrots and Rolls
This was so delicious last week and it worked so well for me not to have to cook when I was exhausted from shopping, that I'm doing it again! All I'm doing this throwing everything in the crockpot and cooking it on low the whole day.  Try it :)
  • From the freezer: pork loin
  • From the pantry: barbecue sauce, Klondike Gold Potatoes
  • From the fridge: baby carrots, bread dough
  • Need to harvest: nothing
  • Need to make in advance:  bake rolls
  • Need to buy: nothing

THURSDAY: Monterey Chicken with Roasted Veggies
  • From the freezer: sweet peppers,chicken breasts
  • From the pantry: EVOO, salt & pepper, flour, white wine
  • From the fridge butter, chicken broth, heavy whipping cream
  • Need to harvest: nothing
  • Need to make in advance: shred Monterey Jack cheese
  • Need to buy: asparagus, Monterey Jack cheese

FRIDAY: Almond-Lemon Baked Tilapia with Green Bean & Spinach Couscous
  • From the freezer: (3) tilapia fillets, lemon zest, green beans
  • From the pantry: Dijon mustard, sliced almonds, parsley flakes, EVOO, pepper, couscous, lemon juice, salt
  • From the fridge: spinach
  • Need to harvest: nothing
  • Need to make in advance: nothing
  • Need to buy: nothing

SATURDAY: Scalloped Potatoes and Ham* with Rolls
I use the recipe from my Crockpot Classics cookbook but the one I linked to is identical. I add 1 tsp of Chicago Steak Seasoning too, to give it a kick!
  • From the freezer: ham steak
  • From the pantry: russet potatoes, can of cream of mushroom soup, Chicago Steak Seasoning
  • From the fridge: bread dough
  • Need to harvest: nothing
  • Need to make in advance: bake rolls
  • Need to buy: cheddar cheese

SUNDAY: Quick Turkey Chili
  • From the freezer: tomato paste, diced green pepper, ground turkey
  • From the pantry: vegetable oil, chili powder, cumin, Kosher salt,  2 cans diced fire-roasted tomatoes, chicken broth, can of black beans, tortilla chips
  • From the fridge: sour cream, cheddar cheese
  • Need to harvest: green onions
  • Need to make in advance: nothing
  • Need to buy: nothing
