This Week's Dinner Plans: 2/15 through 2/21, 2016


Each week I peek in my fridge, freezer, and garden, to see what needs to be used up and I take a couple of minutes to think of ways to use up those ingredients in the next few days...



MONDAY:   Beef & Vegetable Stir Fry with Couscous
* recipe from All-New Light Cooking cookbook, p 148 but I'm using different veggies and couscous instead of rice
  • From the freezer: nothing
  • From the pantry: light soy sauce, cornstarch, sugar, ginger, garlic powder, sesame oil, salt & pepper, vegetable oil, couscous
  • From the fridge: beef chuck steak, collard greens, broccoli florets, baby bella mushrooms, beef broth
  • Need to harvest: nothing
  • Need to make in advance: nothing
  • Need to buy: nothing

TUESDAY: Chinese Roasted Pork with Green Chili Rice
* Green Chili Rice recipe from All-New Light Cooking Cookbook, p 310
  • From the freezer: Sirloin pork roast, cube of cilantro
  • From the pantry: vegetable oil, onion, light soy sauce, brown sugar, Chinese 5-spice powder, rice, chicken broth powder, 1 can diced green chilies, oregano, salt, cumin seeds
  • From the fridge: minced garlic, ginger paste
  • Need to harvest: 3 green onion stalks
  • Need to make in advance:  ** this is a crockpot recipe**
  • Need to buy: nothing

WEDNESDAY: Zuppa Toscana with Biscuits
  • From the freezer: diced onion
  • From the pantry: Klondike Gold potatoes, white wine, chicken broth powder 
  • From the fridge: Oscar Mayer Selects sausage, minced garlic, collard greens, Pillsbury Grands! biscuits, plain yogurt
  • Need to harvest: nothing
  • Need to make in advance:  **defrost neufchatel cheese for tomorrow**
  • Need to buy: sausage

THURSDAY: Slow-Cooker Beef Stroganoff with Biscuits
  • From the freezer: neufchatel cheese
  • From the pantry: pasta, cream of mushroom soup, onion soup mix, can of sliced mushrooms, pepper
  • From the fridge: beef chuck steak, sour cream, leftover Pillsbury Grands! biscuits
  • Need to harvest: nothing
  • Need to make in advance: **crockpot meal**, cook pasta separately
  • Need to buy: nothing

FRIDAY: Spanish Omelet and Salad
  • From the freezer: diced peppers, diced onion, diced smoked ham
  • From the pantry: nothing
  • From the fridge: eggs, minced garlic, milk. cheddar cheese, homemade salad dressing
  • Need to harvest: nothing
  • Need to make in advance: peel and dice potatoes, cook potatoes, peppers and onions
  • Need to buy: tomatoes, lettuce, cucumber

SATURDAY:  Tuna Patties & Cheese Ravioli
  • From the freezer: 0.5 bag of cheese ravioli
  • From the pantry: cans of tuna, vegetable oil, bread crumbs,pasta sauce
  • From the fridge: 1 egg
  • Need to harvest: nothing
  • Need to make in advance:  nothing
  • Need to buy: nothing

SUNDAY:  Burgers and Honey Roasted Red Potatoes
  • From the freezer: ground beef, diced onion
  • From the pantry: buns, red potatoes, honey, dry mustard, salt & pepper
  • From the fridge: cheese slices, zesty pickles, ketchup, mayo, butter
  • Need to harvest: nothing
  • Need to make in advance:  roast the potatoes
  • Need to buy: hamburger buns, cheese slices
