This Week's Dinner Plans: 2/8/16 through 2/14/16

Each week I peek in my fridge, freezer, and garden, to see what needs to be used up and I take a couple of minutes to think of ways to use up those ingredients in the next few days...

Yikes, I'm really late posting this!

MONDAY: Baked Ziti with Dark Turkey Meat
  • I just cooked a box of ziti, mixed it with half a jar of Bertolli Italian Sausage-flavored pasta sauce (since that's what I had in the fridge), mixed a bunch of turkey dark meat cut into pieces into it and topped it with 4 oz of shredded cheddar. Then I broiled it all for 2 minutes.  Delish!

TUESDAY:  Turkey Caesar Salad with Asparagus Soup and Biscuits
* Asparagus soup recipe from "The Soup Bible" cookbook, p 235
  • From the freezer: chicken stock
  • From the pantry: croutons, cornstarch
  • From the fridge: Light Caesar dressing, Boston lettuce, cucumber, grape tomatoes, white turkey meat, olives, asparagus, plain yogurt, butter, Pillsbury Grands! biscuits
  • Need to harvest: nothing
  • Need to make in advance:  bake biscuits
  • Need to buy: nothing

WEDNESDAY: Leftovers Night
  • More than likely I will have meatloaf and baked ziti leftovers, taking up much needed space in my fridge.
  • Need to make in advance: **Defrost and brown ground beef for tomorrow and shred mozzarella cheese***

THURSDAY: Slow Cooker Lasagna
  • From the freezer: nothing
  • From the pantry: pouch of Progresso Recipe Starters Fire Roasted Tomato sauce, lasagna noodles
  • From the fridge: browned ground beef, ricotta cheese, mozzarella
  • Need to harvest: nothing
  • Need to make in advance: ** crockpot dinner, start it before leaving for Gainesville!**
  • Need to buy: nothing

FRIDAY: Moroccan Lentil & Vegetable Soup* with Grilled Turkey and Cheese Paninis
* Recipe from "All-New Light Cooking" cookbook, p 87
This will allow me to use the yellow squash that I bought 2 weeks ago. (I was supposed to cook that dinner last week but didn't)
  • From the freezer: Diced onions, diced celery, sun-dried tomatoes, green pepper, basil or cilantro cubes
  • From the pantry:  EVOO, lentils, coriander, cumin, black pepper, cinnamon, chicken broth
  • From the fridge: minced garlic, yellow squash, tomatoes, cheese slices, butter, leftover white turkey meat, wheat sub rolls
  • Need to harvest: nothing
  • Need to make in advance:  **defrost beef chuck steak for tomorrow**
  • Need to buy: nothing

SATURDAY:  Beef & Vegetable Stir Fry with Couscous
* recipe from All-New Light Cooking cookbook, p 148 but I'm using different veggies and couscous instead of rice
  • From the freezer: nothing
  • From the pantry: light soy sauce, cornstarch, sugar, ginger, garlic powder, sesame oil, salt & pepper, vegetable oil, couscous
  • From the fridge: beef chuck steak, collard greens, broccoli florets, baby bella mushrooms, beef broth
  • Need to harvest: nothing
  • Need to make in advance: **check the freezer to see if we have flour tortillas. If so, defrost for tomorrow.**
  • Need to buy: nothing

SUNDAY: Turkey Tacos with Green Chili Rice
* Green Chili Rice recipe from All-New Light Cooking Cookbook, p 310
  • From the freezer: diced onion, cube of cilantro
  • From the pantry: rice, can of chicken broth, can of diced mild green chilies, oregano, cumin seeds
  • From the fridge: leftover turkey meat, shredded cheese of some kind, salsa, sour cream
  • Need to harvest: 3 green onion stalks
  • Need to make in advance:  **make my own tortillas to supplement the ones we already have if I didn't find any in the freezer**
  • Need to buy: nothing
