This Week's Dinner Plans: 2/29 through 3/6, 2016


Each week I peek in my fridge, freezer, and garden, to see what needs to be used up and I take a couple of minutes to think of ways to use up those ingredients in the next few days...

Well, I'm really late posting this because I just now worked out our menu, ha.  Nothing complicated as I don't feel like cooking most nights right now. My energy level is way down and I'm just trying to avoid getting take-out.


MONDAY:  Fiesta Black Bean Soup with Corn Muffins

TUESDAY: BBQ Pulled Pork in crockpot with White Rice


WEDNESDAY: Pulled Pork Quesadillas with Black Beans, Corn and Steamed Herbed Broccoli
  • From the freezer: nothing
  • From the pantry: tortillas, can of low sodium black beans, can of no salt added corn kernels, salt, dried basil, garlic powder
  • From the fridge: leftover pulled pork, shredded cheddar cheese, sour cream, broccoli crowns
  • Need to harvest: nothing
  • Need to make in advance:  nothing
  • Need to buy:  nothing

THURSDAY: Cheeseburgers and New Red Potato Salad
  • From the freezer: ground beef, celery
  • From the pantry: red potatoes, white vinegar, dill, mustard
  • From the fridge: hamburger buns, cheese slices, condiments, lowfat mayo, hard boiled eggs, milk
  • Need to harvest: green onions
  • Need to make in advance:  cook potatoes in the morning, make dressing
  • Need to buy: nothing

FRIDAY: Italian Chicken & Tomato Pasta Toss and biscuits
  • From the freezer: chicken breast, basil cubes
  • From the pantry: pasta, EVOO, balsamic vinegar
  • From the fridge: Roma tomatoes, minced garlic, grain mustard,lemon juice, grated Parmesan, Pillsbury Grands! biscuits
  • Need to harvest: nothing
  • Need to make in advance:  make my own salad dressing, bake biscuits
  • Need to buy: nothing

SATURDAY: Fish Tacos and Salad
  • From the freezer: 3 tilapia fillets
  • From the pantry: Old Bay Seasoning, bread crumbs, vegetable oil, tortillas, croutons
  • From the fridge: green salsa, shredded cheese, Boston lettuce, Roma tomatoes
  • Need to harvest: nothing
  • Need to make in advance: homemade salad dressing
  • Need to buy: block of mild cheddar or Monterey Jack (my daughter will stop by Aldi this afternoon to get it since I forgot)

SUNDAY: Southwest Beef Roast in Crockpot, Steamed Herbed Potatoes and Carrots with Carrot Ginger Bread

  • From the freezer: Beef bottom beef roast
  • From the pantry:  Southwest marinade mix, vinegar, vegetable oil, salt, garlic powder, basil, Klondike Gold potatoes, dried onion flakes, bread flour
  • From the fridge: carrots, ginger paste, yeast
  • Need to harvest: nothing
  • Need to make in advance:  peel and cut carrots to steam, grate carrots for bread, make bread in breadmaker
  • Need to buy: nothing
