Dinner Plans This Week


Each week I peek in my fridge, freezer, and garden, to see what needs to be used up and I take a couple of minutes to think of ways to use up those ingredients in the next few days...


MONDAY: Roasted Seasoned Chicken Breasts, Mashed Potatoes and Herbed Steamed Broccoli

TUESDAY:  Cumin Cornmeal-Crusted Pork Chops with Rice and Corn on the Cob
  • From the freezer: pork loin chops
  • From the pantry: white rice, kosher salt, pepper, panko bread crumbs, cornmeal, cumin, EVOO
  • From the fridge: butter, egg, Dijon mustard, ears of corn
  • Need to harvest: nothing
  • Need to make in advance: nothing
  • Need to buy: nothing

WEDNESDAY: Portobello Mushroom Stroganoff and Side Salad
  • From the freezer: nothing
  • From the pantry: onion, AP flour, egg noodles
  • From the fridge: butter, baby portobello mushrooms, Better Than Bouillon, light sour cream, lettuce, grape tomatoes, cucumbers
  • Need to harvest: parsley
  • Need to make in advance: nothing
  • Need to buy: nothing

THURSDAY: Classic Chicken Parmesan with Thin Spaghetti and Side Salad
  • From the freezer: AP flour
  • From the pantry:  thin spaghetti, seasoned bread crumbs, seasoning (pick one), canola oil, pasta sauce
  • From the fridge: chicken breasts, mozzarella,  eggs, grape tomatoes, cucumber
  • Need to harvest: basil
  • Need to make in advance: nothing
  • Need to buy: Romaine lettuce

FRIDAY: Cabbage and Smoked Turkey Sausage
  • From the freezer: smoked turkey sausage
  • From the pantry: sugar, onion, red pepper flakes, seasoned salt, caraway seeds, cabbage
  • From the fridge: bacon, minced garlic
  • Need to harvest: nothing
  • Need to make in advance: nothing
  • Need to buy: nothing

SATURDAY:  Southwestern Turkey Meat Loaf and Sweet Mashed Potatoes
  • From the freezer: 2 lbs ground turkey
  • From the pantry:  sweet potatoes, onion, vegetable oil, rice, beef broth, can of NSA corn, picante sauce, tortilla chips, taco seasoning
  • From the fridge: butter, milk, minced garlic, shredded cheese
  • Need to harvest: nothing
  • Need to make in advance: nothing
  • Need to buy: nothing

SUNDAY:  Grilled Taco Burger and Potato Foil Packs
  • From the freezer: 1 lb ground beef
  • From the pantry: taco seasoning mix, potatoes, onion
  • From the fridge: bread crumbs, milk
  • Need to harvest: nothing
  • Need to make in advance: nothing
  • Need to buy: Velveeta-type cheese

  1. Sounds delicious! Can I just move into your neighborhood and come over to dinner every night? Or I could just collect my plate and go home, if you don't want company. I'll even do the dishes for you, since I don't mind doing dishes. Actually, I don't mind cooking, either, except I usually end up cooking too much and then, there's leftovers that need eating. It wasn't a problem when my daughter was home. But when it's just me...I made that box of mac and cheese last night and now, there's at least 2 more servings of mac and cheese that must be finished. Tonight's dinner might be baked battered cod fillets (from the freezer) with some of the leftover mac and cheese.

  2. Oooooh, if you had only told me this a few months ago! I could have driven you to all your appointments, lol.

    Have you thought about maybe just cooking 1/2 a box of mac'n cheese at a time? You can reclose the little cheese packet by rolling it up. My middle son used to do this before he realized that they could just eat the whole box in one setting.

    I think that I would also have a hard time adjusting to cook for just 2 or 1. It's gotta be hard, as a single, to cook because as you said, you either end up with a lot of leftovers to freeze or you just eat the same thing for several days.
