This Week's Dinner Plans


Each week I peek in my fridge, freezer, and garden, to see what needs to be used up and I take a couple of minutes to think of ways to use up those ingredients in the next few days...

This menu might look familiar because it's 99% the same one I posted last week as I ended up not cooking what I had planned!

MONDAY:  Black Bean Soup, Grilled Cheese Sandwiches
  • From the freezer: nothing
  • From the pantry: onion, cans of black beans, corn, diced tomatoes, red pepper flakes, cumin
  • From the fridge: minced garlic, bread, butter, cheese slices
  • Need to harvest: nothing
  • Need to make in advance: nothing
  • Need to buy: nothing

    TUESDAY: Grilled Chipotle Chicken Sausages, White Rice, Green Beans with Bacon
    • From the freezer: chipotle chicken sausages, green beans
    • From the pantry: white rice
    • From the fridge: bacon
    • Need to harvest: nothing
    • Need to make in advance: nothing
    • Need to buy: nothing

    WEDNESDAY: Three-Bean Turkey Chili with Jalapeño Buttermilk Corn Bread
    * Chili recipe from Crockpot's Hearty Soups, Stews & Chilies, p 138
    • From the freezer: ground turkey
    • From the pantry: 1 large can diced tomatoes, 1 can each chickpeas, black beans and kidney beans, 1 small can tomato sauce, 1 small can diced green chiles, chili powder, vinegar, cornmeal, flour, salt
    • From the fridge: eggs, sour milk, jalapeños
    • Need to harvest: nothing
    • Need to make in advance: **crockpot recipe**
    • Need to buy: onion

    THURSDAY:  Rosemary White Bean Soup with Jalapeño Buttermilk Corn Bread
    * I'll be using canned beans instead of dry beans since that's what I have on hand
    • From the freezer: chicken stock (8 cups)
    • From the pantry: 1 can cannellini beans, 1 can great northern beans, onions, 1 bay leaf, kosher salt, black pepper
    • From the fridge: minced garlic, leftover corn bread
    • Need to harvest: large rosemary branch
    • Need to make in advance: nothing
    • Need to buy: nothing

    FRIDAY: Cheese Quesadillas and Spanish Rice
    • From the freezer: nothing
    • From the pantry: 8 oz tomato sauce, homemade taco seasoning, white rice
    • From the fridge: flour tortillas, cheddar cheese, sour cream
    • Need to harvest: nothing
    • Need to make in advance: nothing
    • Need to buy: nothing

    SATURDAY:  Breakfast for Dinner: Pancakes, scrambled/sunny side up eggs, toast, breakfast sausages, orange slices
    • From the freezer: sausages
    • From the pantry: pancake mix
    • From the fridge: eggs, milk, navel oranges
    • Need to harvest: nothing
    • Need to make in advance: nothing
    • Need to buy:  maple turkey breakfast sausages

    SUNDAY:  Cheeseburgers, Roasted Potatoes, Salad
    • From the freezer: ground beef
    • From the pantry: potatoes, vegetable oil
    • From the fridge: hamburger buns, cheese slices
    • Need to harvest: nothing
    • Need to make in advance:  peel potatoes and boil them
    • Need to buy: lettuce, cucumber

    1. Sounds good. Glad you are able to reuse last week's menu plan! I've no idea what I'll be making this week. I might make steak and baked potatoes (both in the freezer, from the package my supervisor sent me) and steamed broccoli for dinner, tonight.

      1. It did make planning this week reaaaaally easy. So easy that this morning I was tempted to serve the black bean soup leftovers for dinner tonight so i could push tonight's plans back to next week! But I did freeze them so I have a dinner ready for, let's say 2 weeks from now. You still have some steaks from your supervisor? It's true that you haven't been eating much lately. If I lived alone, I suspect that I wouldn't plan a menu in advance.
