This Week's Dinner Plans

Each week I peek in my fridge, freezer, and garden, to see what needs to be used up and I take a couple of minutes to think of ways to use up those ingredients in the next few days...

MONDAY: Grilled Chipotle Chicken Sausages, White Rice, Stir-Fried Collard Greens and Garlic Bread
  • From the freezer: nothing
  • From the pantry:  Rice
  • From the fridge: Chicken sausages, Stir-fried collard greens leftovers
  • Need to harvest: nothing
  • Need to make in advance: nothing
  • Need to buy: nothing

TUESDAY: Salisbury Meatloaf, Mashed Potatoes, Honey Glazed Carrots with Leftover Garlic Bread
  • From the freezer: ground beef, diced celery
  • From the pantry: kosher salt, bread crumbs, onion powder,  Worcestershire sauce, pepper, potatoes
  • From the fridge: egg, butter, carrots, Better Than Bouillon Chicken, milk, butter
  • Need to harvest: thyme
  • Need to make in advance: cook potatoes for tomorrow's potato salad, make mashed potatoes for tonight, make sure we have bacon in the freezer
  • Need to buy: nothing

WEDNESDAY: Pulled Pork Sandwiches and Southern-Style Potato Salad
  • From the freezer: Pork loin roast, bacon
  • From the pantry:  barbecue sauce, hamburger buns, gold potatoes
  • From the fridge: celery, light mayo, hard boiled eggs, light sour cream, sweet pickle relish, mustard
  • Need to harvest: nothing
  • Need to make in advance:  Make potato salad and refrigerate
  • Need to buy: bacon (?)

THURSDAY: Grilled Marinated Chicken Drumsticks, Minute Rice Medley, Grilled Veggies
  • From the freezer: chicken drumsticks
  • From the pantry:  marinade, Minute rice
  • From the fridge: nothing
  • Need to harvest: nothing
  • Need to make in advance: nothing
  • Need to buy: vegetables for grilling

FRIDAY: Grilled Cheese Sandwiches and Spicy Carrot Soup
  • From the freezer: leeks
  • From the pantry: bread, whipping cream UHT carton, pepper
  • From the fridge: Better than Bouillon, cheese slices, butter, carrots, 
  • Need to harvest: nothing
  • Need to make in advance:  nothing
  • Need to buy:  nothing

SATURDAY: Tuna Patties, Couscous with Vegetable Stir-Fry
  • From the freezer: stir-fry vegetables
  • From the pantry: cans of tuna, couscous
  • From the fridge: eggs, bread crumbs, cheddar cheese
  • Need to harvest: nothing
  • Need to make in advance:  shred cheddar
  • Need to buy: nothing

SUNDAY:  Cheeseburgers, Roasted Potatoes, Salad
  • From the freezer: ground beef
  • From the pantry: hamburger buns, potatoes
  • From the fridge: butter, lettuce, tomatoes, cucumber, cheese slices, ketchup, homemade pickles
  • Need to harvest: nothing
  • Need to make in advance:  homemade salad dressing, roast potatoes
  • Need to buy: nothing

  1. Another week of meals from what's on hand! Well done!

    I've no idea what I'm cooking this week. Nothing seems to appeal to me. I bought an individual frozen pizza, yesterday, for my lunch and ate less than half of it. I made a peanut butter sandwich for dinner (with 2 slices of bread) and ate half of it, with a banana. Sigh.

    1. Have you talked to your doctor about your loss of appetite? Maybe you can make yourself some smoothies so you get your vitamins and some sweetness in you too?
