This Week's Dinner Plans: Monday 2/20 through Sunday 2/26, 2017


Each week I peek in my fridge, freezer, and garden, to see what needs to be used up and I take a couple of minutes to think of ways to use up those ingredients in the next few days...


MONDAY:  Pasta and Parmesan Chicken Breasts, with Side Salad
  • From the freezer: Barber chicken
  • From the pantry:  pasta
  • From the fridge: butter, Parmesan cheese, lettuce, tomatoes, cucumber, dressing
  • Need to harvest: nothing
  • Need to make in advance: nothing
  • Need to buy: nothing

TUESDAY:  Turkey Pot Pie and Salad
  • From the freezer: Pie crust patties (2)
  • From the pantry:  nothing
  • From the fridge: leftover turkey veggie soup (drained), lettuce, tomatoes, cucumber, dressing
  • Need to harvest: nothing
  • Need to make in advance:  **Bake in oven**
  • Need to buy:  nothing

WEDNESDAY: Burritos and Mexican Rice
  • From the freezer: ground beef, guacamole
  • From the pantry: burrito seasoning, rice, oil, NSA tomato sauce, garlic salt, cumin, onion
  • From the fridge: lettuce, tomatoes, salsa, light sour cream, shredded cheese, leftover chicken broth + Better Than Bouillon
  • Need to harvest: nothing
  • Need to make in advance:  **make tortillas if I don't have enough on hand**, rice needs to cook for 25 minutes at least.
  • Need to buy:  nothing

THURSDAY: Ham and Egg Frittata and Salad
  • From the freezer: cubed ham
  • From the pantry:  2 potatoes, onion
  • From the fridge: eggs, milk, butter, minced garlic, cheddar cheese, lettuce, tomatoes, cucumber, dressing
  • Need to harvest: nothing
  • Need to make in advance: nothing
  • Need to buy: nothing

FRIDAY: Butternut Squash Soup and Grilled Turkey and Cheese Sandwiches
  • From the freezer: nothing
  • From the pantry:  butternut squash, onion, cinnamon, nutmeg, ground cloves, salt & pepper
  • From the fridge: Better Than Bouillon, whipped cream leftovers, Black Forest Turkey, bread, cheese slices, butter
  • Need to harvest: nothing
  • Need to make in advance: peel and cook butternut squash in the morning
  • Need to buy: nothing

SATURDAY:  Green Chile Pork Stew and White Rice
  • From the freezer: pork loin roast
  • From the pantry:  can of NSA corn, can of diced green chiles, cumin, rice, EVOO
  • From the fridge: cilantro paste
  • Need to harvest: nothing
  • Need to make in advance:  nothing
  • Need to buy:  nothing

SUNDAY:  Cheeseburgers, Roasted Potatoes and Salad
  • From the freezer: ground beef
  • From the pantry:  potatoes, oil, salt & pepper
  • From the fridge: cheese slices, dressing
  • Need to harvest: nothing
  • Need to make in advance: nothing
  • Need to buy:  hamburger buns, lettuce, cucumber

  1. Looks delicious, as usual. I have some butternut squash in the freezer that I think I will use next week to make soup. I'm really looking forward to it!

    1. I'll be using my last butternut squash, sob. I think this year I'll double how many squashes I buy when they're cheap at Aldi!

  2. Another week of yummy sounding meals, Nathalie, six of them not requiring you to buy anything for them! I was planning to go grocery shopping today, but I really don't feel like it, so I am going to try to get through the week with what I have on hand. Lots of leftovers and freezer/pantry meals, I think.

    1. Good for you, Bless! You still have several servings of the teriyaki beef in your freezer, don't you? And it always seems like people are thanking you with cooked dishes. I'll bet you could probably get away with never having to cook, hahaha. You're going to be a lot under budget for February!
